Almond Falafel

*patties pictured were blended in a Vitamix and didn’t get as blended/fine as it should. It should turn into a dough.

Ingredients

  • 1.5 Cup raw almonds
  • 1/2 small zucchini
  • 2 Tbsp sesame seeds
  • 2 Tbsp tahini
  • 1 small lemon, juiced
  • 1 handful of minced cilantro
  • 1 handful of minced parsley
  • 1 green onion, sliced
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper

Directions

  • Mix all ingredients in a food processor and blend until well combined.
  • Use coconut or avocado oil in a non-stick pan on medium low heat.
  • Use the batter to make small patties and fry on both sides until golden brown, about 5 minutes each side.
